VERY BERRY PIE

I have been craving pie for a few weeks now. With August right around the corner what a better what to celebrate the end of July with a berry pie! Here is my current favorite recipe!

 

Ingredients

One 16 ounce bag of frozen blackberries, thawed and strained

One 16 ounce bag of frozen raspberries, thawed and strained

1 ½ cup sugar plus some for sprinkling

¼ cup corn starch or flour

2 tablespoons all-purpose flour

¼ teaspoon fine salt

Butter or Crisco for greasing

Two 9-inch refrigerated pie crusts or homemade crust

 

In a large bowl, add the blackberries, raspberries, sugar, cornstarch, flour, and salt and toss to combine. Grease or butter the pie dish and unroll one of the crusts and place it into the dish. Place the mixture of berries on top of the crust. Unroll the second crust over the top or you can do a specialty crust like I did! Make sure if you used the full crust on the top to place some air vents for the steam! Sprinkle the left over sugar on the top.

 

Preheat the open to 400 degrees and bake until golden brown or when the mixture is bubbling at the center!
