Mags Cooks Cajun Stir Fry #1

DSC_1051 DSC_1056Today I thought I’d do something a bit different. Besides my love for all things cosmetics….. I love cooking. I love summers vegetables and I try to find ways to take advantage of them. Here is my healthy summer Cajun Stir Fry. Now personally you can change these vegetables as you like. This was the stuff I had left over in my fridge. Make sure before starting this to cut up all vegetables and chicken.

What you’ll need:

  • 4 cleaned chicken breasts
  • (as much as you want) Cajun spice
  • 2 table spoons Olive Oil
  • 1 red pepper/yellow pepper/orange pepper
  • 1 bunch of asparagus
  • 1 cup of carrots
  • 1 shallot

Heat up olive oil in a frying pan and once hot placed seasoned chicken in pan. Cook chicken until fully cooked and brown around sides. Take the chicken out of the pan and set on the side.

With the remaining pan keep hot and add the remaining oil. While still hot add your vegetables and shallot. Cook until it is at your desire.

After vegetables are cooked turn off and add the chicken. Then of course eat till your hearts content.
